Pancake Friday


And the recipe…

Oatmeal pancakes
Bowl 1, combine the following:
2 c oatmeal
1/2 t soda
2.5 c buttermilk
Let stand 5 minutes.

Bowl 2, combine the following:

1 c flour
2 t powder
1 t salt
2 T sugar.

Mix bowl 1 and 2 together. Then add 1/3 c oil, add 2 eggs. Mix.

At this point you can also add chopped nuts (pecans) if desired.

Heat up a skillet and enjoy with maple syrup & whip cream! Yum!!
